Amelia Discher RD, LDN
Amelia is a dedicated registered dietitian with a passion for helping clients heal their relationship with food while navigating complex gastrointestinal (GI) concerns. Her mission is to empower clients to feel confident and comfortable in their bodies by using evidence-based nutrition strategies tailored to their unique needs and lifestyles.
She has completed advanced functional GI training, equipping her to support even the most complex GI cases, including IBS, IBD, SIBO, and food sensitivities. Rather than relying on restrictive diets, Amelia uses the most current research to help clients find lasting relief and confidence in managing their nutrition and GI symptoms.
Amelia provides specialized care for clients using GLP-1 medications for weight management, offering guidance on nutrition optimization and long-term sustainable health habits. In addition, she also works with clients navigating metabolic concerns such as PCOS and insulin resistance, supporting them in symptom management and overall well-being. She blends expertise with compassion to create a safe space where clients can build a healthier relationship with food, free from fear and judgment.
Amelia holds a degree in Nutrition and Dietetics from Dominican University. Outside of work, she enjoys lifting weights, spending time with her beloved dog, Wrigley, and fueling her love of coffee.

Soleil Watanabe MS, RD, LDN
Soleil is a registered and licensed dietitian passionate about helping clients better understand their bodies so they can feel empowered in their health and in their lives. She believes food is more than nourishment, but also a powerful tool that shapes how we experience, think, and live, influencing our connection to culture, joy, each other, and everyday life.
Fascinated by how the color and variety of foods reflect the unique nutrients that help our bodies flourish, Soleil embraces an additive mindset that encourages balance, beauty, and abundance. She also takes a whole-person, mind-body approach, fostering both physical nourishment and a deeper connection within. With this perspective, she sees the body’s experiences as meaningful messages, helping clients uncover patterns so they can move with lasting clarity.
Soleil supports a range of concerns including gastrointestinal health, food sensitivities, PCOS, pregnancy and postpartum nutrition, autoimmune conditions, and child feeding and picky eating. She approaches client relationships as a partnership, creating a compassionate space where individuals feel truly seen. Together, they build sustainable habits that not only align with each person’s lifestyle but also foster profound confidence. Creativity is central to her approach, helping individuals of all ages, as well as families, reimagine nourishment in ways that feel personal, flexible, and genuinely enjoyable.
Soleil holds both her Bachelor’s and Master’s degrees in Nutrition from the University of Illinois at Chicago. Outside of work, she enjoys painting, crafting, going on walks, spending time with family and friends, and exploring her love for creativity and connection. She also loves bulldogs, music, all things colorful, and dreams of traveling the world to experience the beauty of different cultures!

Elizabeth Einstein RD, LD
Elizabeth is a registered and licensed dietitian who is dedicated to helping clients achieve their health goals through personalized, client-centered nutrition care. She believes that every individual’s relationship with food and health is unique, and she approaches her work with empathy and a trauma-informed perspective. Elizabeth creates a safe, supportive, and judgment-free environment where clients feel heard, respected, and empowered to make sustainable changes.
Her professional experience spans both inpatient and outpatient settings. In the ICU, she managed complex nutrition needs, including enteral and parenteral nutrition, and cared for patients with a variety of conditions such as renal disease, gastrointestinal disorders, diabetes, cardiovascular disease, and neurological disorders.
Elizabeth also has extensive experience in oncology nutrition. She has worked closely with patients undergoing chemotherapy and radiation, supporting both patients and their families through a high-stress, emotionally and physically challenging time. She provides practical, compassionate strategies to help manage side effects, maintain nourishment, and improve overall quality of life.
She earned her Bachelor of Science in Nutrition and Dietetics from Dominican University in River Forest, Illinois, and completed her clinically focused dietetic internship at Texas Health Presbyterian Hospital in Dallas. Her combined inpatient and outpatient experience allows her to bring a well-rounded, evidence-based approach to every client she works with.
Outside of work, Elizabeth enjoys staying active through Pilates, weight lifting, and hiking. She also loves camping and spending quality time with her family, making the most of the outdoors whenever possible.
